Chocolate Whoopie Pies with Caramel Cream Filling

It seems (and probably is) like ages since my previous post, but we had a loooong (one “o” per day-off) weekend and we visited family in Switzerland. 🙂

But as I said in the previous post, we have whoopie pies today!

I only tried whoopie pies for the first time this year and I fell in love. This dessert has everything I like: you bite into soft cookie to reach a thick creamy frosting. Swoon.

Also, for the first time, I made caramel all by myself!

Carrot Cake

I was always a bit skeptical when I was seeing carrot cake in a menu (or in Starbucks). Should I try it? Should I not? And most of the times I was not. And then I did. And boy, was THAT a revelation! I loved it! The combination of carrots and spices, the cream cheese frosting, the moistness… Everything just worked!

So, when I was planning the baking menu for the weekend I decided to make a carrot cake for the first time. And it turned out exactly as I was hoping it will: soft, moist and delicious!

The carrot cake is a rather simple dessert to make and if you want to impress even more you can bake 2 layers and include frosting in between them.

Chocolate Cupcakes with Strawberry Frosting

A few days ago it was Valentine’s day and I’m NOT the type of girl that boycotts the day. But I AM the kind of girl that enjoys sharing sweet treats! And so, the night before V-day, I decided to bake cupcakes for my lab-mates.

Obviously, I wanted each little cake to showcase some of Valentine’s traditions: chocolate, pink, hearts. And the result was delicious! Also, I used fresh strawberries and the frosting had an amazing fruity taste!

Before you start make sure the butter is in room temperature. Preheat the oven at 190ºC (375ºF).
