Tuna Empanada with Caramelized Onions and Peppers

Happy 2013!

I hope you had great holidays, relaxing and full of amazing food! I know I did!

Since this is my first post since (what seems like) ages, I decided to stick to something rather simple, but very delicious: Empanada with tuna and a mix of caramelized onions and three-color peppers!

I used commercially available dough, special for empanadas (very similar to brisee, in my opinion). I definitely believe that if you can find good quality ready dough, it’s not a bad thing to use it! So, no, I’m not ashamed 🙂 .

Green Bean Salad {Thai-Inspired}

I attended recently a Thai-cuisine course and, even though I left agitated due to the (pointless and annoying) efforts of the teacher to brainwash me with how awesome cilantro is (eew!), I did get the chance to taste a delicious salad.

The title says “Thai-inspired” because there were ingredients in the original recipe that I skipped in this one. Either because I didn’t have them at hand or because I felt I’ll like it more without them. Also, the onions were fried crunchy, but I opted for simply caramelizing them.

But no worries! I will give you the full recipe at the end of the post, mentioning the ingredients I didn’t use.

Simple Lentil Soup

The food blogosphere is full of autumn photos, pumpkins and apples.

We, on the other hand, are still waiting for real autumn to kick in, although I think we’ll jump right to winter..

And pumpkin recipes aren’t really my thing. Maybe I’ll make an awesome pumpkin-feta pie my mom makes and post it, but until then I’ve made soup!

It’s the final countdown (honestly, how awesome is this song?), not for one but for 2 things:

  1. My birthdayyyyyyyy in 2 days! Yeah, I’m THAT type of person…
  2. Holidays in Greece in 10 days! Home sweet home!! Beach sweet beach! Heat wave sweet heat wave! Blue sky, sweet blue sky! Food sweet food! I can go on doing this for a while…

Therefore, today I’m going to post a super-duper delicious dish and next week another one (amazing Greek keftedakia (round fried meatballs) are finally coming!).

And then I’m gonna say goodbye for some time. But I’ll give you a great, envy-inducing update once I’m back! 🙂
