Thalia’s Birthday Cake!

As I mentioned in the previous post, some days ago we traveled to Bern, Switzerland, to be with my sister-in-law and her family.

Her beautiful family includes 2 of my favorite people in the world: my 3-year old niece (Thalia) and my 6-month old nephew (Konstantinos). I love those two more than I can tell, and I was even more happy that the trip coincided with the 3rd birthday of my niece!

As you understand, we could not leave the little girl without a homemade birthday cake!

So, keeping in mind the ideas of my sister-in-law and the tastes of my niece (vanilla cream, fresh strawberries, roasted almonds), I made my first birthday cake ever!

And they liked it!

More importantly, when my niece tried it she said: “Mmm, nostimo”, which means “Mmm, delicious”! I was ecstatic to hear this! 🙂

I don’t have step-by-step photos for this cake, but there are hardly any tricky/difficult steps.

What I’m cooking today {Still here!}

It’s been so long since my last post and I feel terrible about this. I can assure you it’s not because I’m lazy or anything, but I’ve been busy working/traveling/hosting Sunday lunch! The latter is actually taking place today and there’s a cooking fever in my kitchen!

My friends from work are coming over for lunch, and feeding friends is very close to my heart (as you may know.. I mean check the blog name.. or the About me section..)! 🙂

So, what am I cooking?? Surprise, surprise: PLENTY!

Cake with Feta, Olives & Walnuts {+An Award}

Do you know Rachel Khoo?

Well, I didn’t. Until a friend of mine introduced me to her awesome BBC show called “The Little Paris Kitchen”.

And then I was immediately hooked. Gorgeous, delicious recipes, cooked and explained beautifully, and with a reasonable amount of ingredients. Always a key factor when you return from work at 20.00!

The first recipe (out of many that I’ve bookmarked!) that I decided to try is a savory cake. And it was super-duper delicious!

I used the basic cake batter recipe, but changed the filling ingredients to match better my husband’s taste. Can’t complain though.

The cake ended up having an amazing Greek-style flavor and our home was smelling like… well, home. 🙂

Carrot Cake

I was always a bit skeptical when I was seeing carrot cake in a menu (or in Starbucks). Should I try it? Should I not? And most of the times I was not. And then I did. And boy, was THAT a revelation! I loved it! The combination of carrots and spices, the cream cheese frosting, the moistness… Everything just worked!

So, when I was planning the baking menu for the weekend I decided to make a carrot cake for the first time. And it turned out exactly as I was hoping it will: soft, moist and delicious!

The carrot cake is a rather simple dessert to make and if you want to impress even more you can bake 2 layers and include frosting in between them.
