Green Bean Salad {Thai-Inspired}

I attended recently a Thai-cuisine course and, even though I left agitated due to the (pointless and annoying) efforts of the teacher to brainwash me with how awesome cilantro is (eew!), I did get the chance to taste a delicious salad.

The title says “Thai-inspired” because there were ingredients in the original recipe that I skipped in this one. Either because I didn’t have them at hand or because I felt I’ll like it more without them. Also, the onions were fried crunchy, but I opted for simply caramelizing them.

But no worries! I will give you the full recipe at the end of the post, mentioning the ingredients I didn’t use.

Cheese Pie with Homemade Filo Pastry

Disclaimer: This was my first attempt at making filo pastry.

Result: Very satisfying!

I chose to use the pastry for a cheese pie. Surprise 1.

And I used feta cheese. Surprise 2.

Oh, come on, there is no surprise here. I am Greek. Cheese pie is a huge tradition for us. It’s our breakfast, lunch and dinner. And I don’t think I need to actually explain why I used feta.

Because it rocks and rules. That’s why!

Beetroot and Yogurt Salad with Walnuts

Since the previous post was a bit more complicated and time consuming, and the next one is going to be about whoopie pies (oh yeah!), I decided to post a super fast, super easy salad/dip!

I don’t know if you know how healthy beetroots are, but they are. I love their natural sweetness, and commonly we prepare them in a salad with olive oil and vinegar.

This is a delicious alternative, where the tanginess of the yogurt pairs nicely with the beetroots.

Simple Lentil Soup

The food blogosphere is full of autumn photos, pumpkins and apples.

We, on the other hand, are still waiting for real autumn to kick in, although I think we’ll jump right to winter..

And pumpkin recipes aren’t really my thing. Maybe I’ll make an awesome pumpkin-feta pie my mom makes and post it, but until then I’ve made soup!

Greek Fáva {Purée made with Yellow Split Peas}

This post will be about Greek fáva, a creamy appetizer/main dish made with yellow split peas, and served with a variety of garnishes according to taste.

But, let me just start by saying:

I had a veeeery nice Saturday.
