Time for dessert! Or breakfast 🙂
Serving today: Chocolate chip banana muffins! There’s no denial chocolate is to banana what a glove is to a hand. Perfect combination!
And those muffins are fluffy and delicious!
And really, very simple to bake!
Start by preheating the oven to 190ºC (375ºF) and buttering/flouring your muffin tin.
Whisk all the dry ingredients together in one big bowl, and mix the yogurt with the eggs in another bowl.
Fold the egg/yogurt mix in the flour with a spatula. Add the melted butter and mix just until combined.
Fold in the banana pieces and the chocolate chips.
Fill the muffin tins using a spoon or your 1/3 measure cup. The tin is filled almost full.
Bake for about 25-30min. The color should be brownish and the toothpick should come out almost clean (some crumbs on it).
They look pretty and fluffy!
Remove the muffins on a wire rack to cool.
Personally, I never allow my cakes/muffins/breads to cool. Admit it, they are so awesome when they are still warm and soft!
Have a nice day!
Ingredients
Makes 12 muffins
(From America’s Test Kitchen Family Baking Book)
3 cups (300g) all-purpose flour
1 cup (200g) brown sugar
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups (180g) plain yogurt (I used Greek)
2 large eggs
8 tbsps (115g) unsalted butter, melted and cooled
1 1/2 cups (270g) banana, cut in small cubes
1/2 cup (90g) chocolate chips
Quick Instructions
Preheat the oven to 190ºC (375ºF) and butter/flour your muffin tin.
Let them cool for 5min in the tin and place them on a wire rack to cool completely. Or enjoy them while warm!
You’re right about the combination of banana and chocolate. These do sound really light with the yoghurt. Grief, I’ve even managed to Pin it!
Ohh! Thanks a lot! 🙂 They are actually not heavy at all!
gimme!
for feeds sake, come to London and bring the recipes!
Ahahaha! You are a god love.
What’s not to love about these muffins? Baked goods with banana smell so good when in the oven. Grabbing one while still warm and discovering there’s chocolate inside would be wonderful. YUM! Thanks for sharing.
I could not agree more!
Yeah I can’t wait either for them to cool.. they need to be eaten ASAP. Awesome muffins.
Oh I would definitely have these for breakfast 🙂 It’s the Greek thing to do!
