Walnut Chocolate Pie

What do you do when you have a bucket full of walnuts and no plans to just eat them?

You make a pie.

A very easy, very decadent pie, with great walnut and chocolate taste.

Did I mention it is soaked in syrup? Yes. It. Is.

This is not your light, airy, dessert. It is rich, chocolate-y, fudgy and sweet!

AND very easy to make!

Preheat the oven to 180ºC (350ºF). Butter and flour a 20x30cm (8×12-inch) tray.

Add all the cake ingredients in a bowl.

Using a hand- or a stand-mixer beat for about 3min.

Pour the batter in the prepared form. Bake for approximately 1h. Check by poking with a wooden skewer at the center of the cake. It’s ready when it comes out clean.

10-15min before the cake is done start preparing the syrup. Put the water, sugar and lemon juice in a small pot and let boil for 7min.

When you remove the cake from the oven, use a wooden (or metal) skewer and poke several holes in it to allow better soaking.

Pour the warm syrup all around the warm cake.

Be patient and let it cool before you dig into it! It will allow the syrup to do its job!

And then you’ll get this:

A delicious, rich cake/pie, filled with chocolate and walnut taste!

You can serve this with a ball of vanilla ice-cream or some whipped cream!

Yeah, you should do that.

For the cake

1 cup chopped walnuts

¼ tsps baking soda

2½ cups all-purpose flour

3 tsps baking powder

6 tbsps milk

250g (9 oz) semi-sweet chocolate, melted

½ tsp vinegar

4 eggs

1 cup olive oil

For the syrup

1½ cups sugar

1½ cups water

2 tbsps lemon juice

    This really does sound easy to make. Will definitely be on the lookout for a pie dish. Hmm, think my s/s roaster is that size. How long would these keep, though. I was toying with halving the recipes as I’m cooking for one, without a freezer.

      I was keeping it in the fridge for 4 days or so. It was fine. Definitely make half if it is for one. You can’t eat huge quantity each time. 🙂
