Cake with Feta, Olives & Walnuts {+An Award}

Do you know Rachel Khoo?

Well, I didn’t. Until a friend of mine introduced me to her awesome BBC show called “The Little Paris Kitchen”.

And then I was immediately hooked. Gorgeous, delicious recipes, cooked and explained beautifully, and with a reasonable amount of ingredients. Always a key factor when you return from work at 20.00!

The first recipe (out of many that I’ve bookmarked!) that I decided to try is a savory cake. And it was super-duper delicious!

I used the basic cake batter recipe, but changed the filling ingredients to match better my husband’s taste. Can’t complain though.

The cake ended up having an amazing Greek-style flavor and our home was smelling like… well, home. 🙂

Ok, so, this recipe is really easy. Really, really easy.

So easy I can remember the amount of the ingredients without looking at my notes!

Therefore, not only is it fast to put together, but then you’ll be able to enjoy it for breakfast/lunch/dinner/snack/picnic/etc. for a few days. WIN!

Or devour eat it in a day. Win again.

Preheat the oven to 180ÂșC (350ÂșF), and line a loaf pan with parchment paper.

Combine the flour, baking powder, feta, olives, walnuts in a bowl. Mix well.

In a big bowl beat the eggs until fluffy. Add the milk, olive oil and yogurt. Season with salt and pepper and whisk.

Carefully add the flour mixture in the egg mixture and mix with a spatula until everything is combined. Do not overmix, because the cake will come out hard.

Pour the batter in the loaf pan.

Bake at 180ÂșC (350ÂșF) for 30-40min. Check if a metal/wooden skewer comes out clean. If yes, then it’s done! It took me exactly 40min.

Allow it to cool in the tin (if you can wait).

I could not wait (duh…), so I removed it, I looked at it for a while, smelled it, showed it off to my husband, smelled it again.

And then I sliced it. Still warm.

The feta cheese was soft, there was an olive/olive oil incredible scent, and the crunchiness of the walnuts was a perfect touch.

Mercy. Or merci. Both will do.

INGREDIENTS

(Basic cake batter from Rachel Khoo)

250g all-purpose flour

15g baking powder

4 eggs

150ml olive oil

100ml fresh, semi-skimmed milk

50g plain Greek yogurt

1 tsp salt (if the fillings you choose are salty, you might need to reduce this a bit)

Pepper

For the filling

150g Greek feta cheese

80g olives (I used black olives, prepared by my father)

100g roughly chopped walnuts

QUICK INSTRUCTIONS

      No, the salty cakes are more French-style I would say. But the feta and the olives were just my Greek touch 🙂

    I’ve made savory quick breads like this just a few times and they are really nice–but I don’t do it as often as I should. This looks like a really nice combination of flavors–love the Greek touch!

      Actually I did a second one only with feta and thyme and it was delicious. I think dry herbs are a great addition!

    Love the cake… it’s one of those things you can eat at breakfast, lunch, tea, dinner and all those in between times… and then when you get those midnight munchies.

    I’ve been planning a feta and olive muffin for ages and just laid my hands on some luscious kalamata olives… Now I’m inspired to go ahead and bake those muffins… thanks for the inspiration.
